PURPOSE:To obtain a seasoning having improved flavor by using a fermented solution obtained by subjecting a saccharide solution to taste fermentation with edible yeast as a sweetener. CONSTITUTION:A fermented solution obtained by subjecting a saccharide solution to taste fermentation with edible yeast is used as a sweetener. In the taste fermentation, a saccharide solution adjusted to 20-40wt.% soluble solid content concentration is used and fermentation temperature is preferably 15-30 deg.C. When syrups or molasses having high degree of industrial use is used as the saccharide solution, since characteristic smell thereof can be removed by the taste fermentation, effects are highly developed. The edible yeast is not particularly limited and edible yeast of the genus Saccharomyces, Kluyveromyces, Hansenula or Candida is used. |
