The dried sediments are opt. extracted with an organic solvent (pref. di- or trichlorethylene) and yeast fat recovered, and the opt. extracted deposit dissolved with acid or alkali, pH is adjusted to 3.5-4.1 (3.6-3.7) and K hydrogen tartrate (for tartaric acid production) is separated, or a by-product of wine preparation or Ca tartrate is dissolved with acid or alkali, pH adjusted to 3.5-4.1 (3.6-3.7) and K hydrogen tartrate is separated.
