PURPOSE:To obtain noodles suitable as a healthy food without using an antiseptic and a preservative by washing vegetables with water, examining, selecting, instantly freezing, instantly sterilizing under high pressure, freeze drying in vacuum, grinding to give powder, blending the powder with a base material of noodles and making noodles. CONSTITUTION:Vegetables and/or fruits are washed with water, examined, selected, instantly frozen, instantly sterilized under high pressure, freeze-dried in vacuum, ground and powdered to give powder, which is mixed with a base material of noodles and made into noodles to give the objective noodles containing 10-50-vol.% powdered vegetables and/or fruits. |
