摘要 PURPOSE:To obtain the subject food, boiled down in soy and excellent in taste and flavor by mutually mixing nearly equal amounts of soy sauce with sugar, sweet SAKE (Japanese rice wine) and SAKE in a boiling vessel, boiling the resultant mixture over a low fire, then putting out the fire, adding small pieces of dried sheet laver in a weight of half the aforementioned soy sauce thereto and cooking the prepared mixture while keeping the shape of the laver. CONSTITUTION:Mutually nearly equal amounts of soy sauce (80-120 pts.) and sugar are boiled in a boiling vessel and similarly nearly equal amounts of sweet SAKE and SAKE are added thereto. The obtained mixture is then boiled over a low fire for about 5-15min and the fire is then put out. After about 2-5min, small pieces (40-60 pts.) dried sheet laver in a weight of half the above- mentioned soy sauce is added to cook the mixture for about 15-25min over a low fire while slowly stirring the mixture and keeping the shape of the small pieces of the dried sheet laver. Thereby, the objective food boiled down in soy is obtained.
