Procedure and plant for working on raw ham after salting, according to which each ham is subjected to the following operations: a preliminary stage of washing the ham by spraying water onto the surface of the ham at a temperature not greater than the ambient temperature and a pressure of not less than 2 bar; a successive final stage of washing the ham by spraying water onto the surface of the ham at a pressure of not less than 6 bar and at a temperature greater than that of the preceding stage; the water sprayed onto the ham in the said stages being clean water and not recycled from the preceding washing operations. <IMAGE> |
