PURPOSE:To readily peel pellicles on the surface of 'KAZUNOKO' (herring roe) and obtain the 'KAZUNOKO' having excellent appearance and texture, by simultaneously bringing the 'KAZUNOKO' into contact with hydrogen peroxide and protease. CONSTITUTION:'KAZUNOKO' is dipped in a saline solution containing preferably 0.3-3% hydrogen peroxide and preferably 0.1% protease at 10 deg.C-room temperature for, e.g. 2 days, to peel pellicles on the surface. |
