PURPOSE:To prepare the titled toasted rice cake easily gelatinizable with hot water or microwave oven, etc., keeping its original shape after gelatinization and having excellent taste and flavor, by heating a rice cake with radiant heat under specific condition and aseptically packaging the rice cake in discrete package. CONSTITUTION:A rice cake is toasted with radiant heat under the following condition. In the surface area of the rice cake having large area, one or more 1st parts 10b inside of a part near the end of said surface part receive less heat radiation than the other parts 10a to retard the expansion of the 1st parts and suppress the expansion of the other parts 10a. The surface part which is the first part toasted and colored to yellowish brown color necessitates 3-20sec from the gelatinization to the coloring to yellowish brown color. The objective toasted rice cake prepared by the above process is free from luster at the most part of the surface 4, contains fine bubbles 3 on almost whole surface layer 2, is imparted with yellowish brown scorch 5 at least a part of said surface, free from blackened part caused by excessive toasting on the surface and contains a solid inner part 6 inside of said surface layer. |
