NEW MATERIAL:Saccharomyces cerevisiae RM-93 (FERM P-11662). USE:Useful for production of food such as yeast, breads, fermented drink or fermented seasoning capable of producing characteristic flavor. PREPARATION:A yeast belonging to the genus Saccharomyces and having resistance to each of N-benzoyl-(D,L)-valine and N-benzoyl (D,L)-phenylalanine is cultured in a culture medium containing a valine analogue or phenylalanine analogue and a yeast having isoamyl alcohol and/or isobutyl alcohol production capacity is selected as a flavor ingredient therefrom. |
