<p>Method and apparatus (2) for scalding of slaughtered poultry, particularly broilers, and where the body of the broilers (14) successively are conveyed through hot water in a scalding tank (4), where along the conveying track for the broilers - in a central zone through the scalding tank (4) - is arranged a powerful descending stream in the water which is heated by means of plate heat exchangers (10) along opposite sides of the track of the broilers through the water, and where said central, descending stream of the water in the scalding tank being formed by blowing in of air outwards/upwards along the heat exchangers (10) in such a manner that a powerful ascending stream of mixed air and water is formed at opposite inner sides of the heat exchangers (10) between these and the broilers (14), that is that the central, descending stream as a longitudinal whirlpool is formed as the outer ascending streams continue inwards along the water surface and are gathered along a longitudinal center zone, where the descending stream at the same time is further increased, as at the same time said blown in air upwards along the heat exchangers carrying along water outwards/upwards from a central, longitudinal bottom zone of the tank (4).</p> |
