The invention relates to the production of acetylpoly(amino acid) structures, characterised in that the amino acids acylated with an acetyl group have resulted from the complete hydrolysis of varied proteins and in that they possess joint antiproteolytic and antidecarboxylase properties. The invention applies to all compositions containing acetylpoly(amino acid)s intended to counteract the degrading effect of proteolytic enzymes, such as: collagenase, elastase, papain, trypsin, pepsin, and that of decarboxylating enzymes, such as lysine decarboxylase and ornithine decarboxylase, mentioned as non-limiting examples.
