A high sugar content cereal dough containing at least 10% by weight of sugar, which may be used for the preparation of breakfast cereals, is cooked by working at elevated pressure, whereby sufficient heat is generated by friction to cook the dough. Suitably, the dough is worked by an auger in the barrel of an extruder, the auger being such that considerable slip, causing friction, occurs, and the cooked dough being extruded. |
