PURPOSE:To prepare the subject food having high gel strength by gelatinizing starch in the presence of water under high pressure, thereby hydrating the starch without heating. CONSTITUTION:The objective food can be prepared by gelatinizing starch in the presence of water under a high pressure (preferably 1,00010,000 kg/cm<2>) and preferably adding tasty components such as fruit juice, milk, soup, seasonings and flavors to the gelatinized product. |
