<p>Smoking chambers fitted with underfloor channels for the chips or shavings are mounted after a pre-drying chamber where the food is pre-dried for about nine hours between 18-20 degrees C. The gratings are formed by sloping bars and each chamber has an offtakes. Blowers are fitted which maintain steady circulation, as well ensure uniform coverage of the food in the chambers.
