PURPOSE:To produce a flavoring material usable as a quasi-drug, etc., by using a specific oligosaccharide containing a potassium salt and/or a magnesium salt obtained from grain such as rice as an active ingredient. CONSTITUTION:Grain such as rice, preferably a layer having 97-80% yield of polished rice, is extracted preferably with water and subjected to solid-liquid separation to give an extracted solution. Then the prepared extracted solution is fractionated by a fractionating filtration operation such as gel filtration chromatography to give a fraction having 300-4,000 molecular weight, which is optionally dried to give a flavoring material comprising an oligosaccharide containing a potassium salt and/or a magnesium salt, having 300-4,000 molecular weight, as an active ingredient. |
