PURPOSE:To prepare lactoneotrehalose through the action of a saccharase on an aqueous solution containing lactose and starch. CONSTITUTION:A novel carbohydrate lactoneotrehalose represented by the formula: O-beta-D-galactopyranosyl-(1 4)-O-beta-D-glucopyranosyl alpha-D-glucopyranoside can be chemically synthesized but is profitably prepared by biochemical reactions, especially through the action of a saccharase on an aqueous solution containing a lactose and starch. As the saccharase, e.g. cyclomaltodextrin.blucano transferease (EC2.4.1.19) is preferably employed but, if necessary, alpha-glucosidase (EC3.2.1.20), beta-galactosidase (EC3.2.1.23), etc., can be used. |
