PURPOSE:To prepare an ice cream having low calorific value and balanced nutrients and enabling enjoyment of various tastes by compounding rice flour to an ice cream mix base and combining the mixture with various seasoning materials. CONSTITUTION:A mix base is prepared by mixing rice flour having a proper particle diameter and produced by crushing rice grains, a low-fat milk, water containing alkali ion, granulated sugar and defatted condensed milk, natural fruit juice, etc., stirring and homogenizing the mixture under heating and finally cooling the product under stirring. The obtained mix base is added with a seasoning material containing low-fat fresh cream, liqueur and a component selected from yolk, ground tea powder and coffee paste. The product is mixed with a flavor and frozen to obtain the objective ice cream.
