The device consists of a heat exchanger (1) designed to be placed in a wine-making vat (2) and connected to an inlet (10) and an outlet (11) for a heat-exchanger fluid which passes through this exchanger. According to the invention, the height and/or position of the exchanger (1) can be varied to follow the variations of the volume and level of the liquid (3) to be treated, e.g. fermenting juices, contained in the vat (2). In one particular embodiment, the exchanger (1) comprises one or more helically wound elastically deformable tubes (4) through which the heat-exchanging fluid passes, with the upper end of the tubes (4) being connected to a float (5) while their lower end is connected to a counterweight (6). <IMAGE>
