PURPOSE:To obtain noodles free from cut end in longitudinal direction of long strips of noodle in reduced amount of common salt added without spilling during boiling the noodle by using specific grain flours as main raw materials. CONSTITUTION:In production of noodles, grain flours having 50U 10<-6>/mg alpha-amylase activity and being 0.9-1.1 in a ratio of amylopection to amylose after decomposition of beta-amylase of starch contained are used as main raw materials and an amount of a common salt added is kept to 1-2.5wt.% based on the amount of grain flour to provide the objective noodles substantially free from cut end in longitudinal direction of long strips of noodle. |
