PURPOSE:To obtain the title MISO having good taste, flavor and excellent balance of nutrition by blending MISO of wheat KOJI (malt) with vegetables, marine products and seasoning in a specific ratio. CONSTITUTION:50-70wt.% MISO of wheat KOJI is blended with 10-30wt.% vegetables (e.g. perilla, ginger, egg plant and cucumber) and 20-40wt.% marine products (preferably sea tangle, shellfishes and fishes) and a proper amount of seasoning to give the objective MISO. |
