PURPOSE:To prepare L-lactic acid having high optical purity and useful as a raw material for food additives and drugs such as infusion solutions by culturing a lactic acid bacterium in a medium containing diammonium biphosphate. CONSTITUTION:A lactic acid bacterium (e.g. Streptococus Feacalis) is cultured in a medium containing diammonium biphosphate preferably in an amount of 0.1-2.0wt.% e.g. at a pH of 5.0-8.0 at 25-40 deg.C for 1-14 days to prepare the objective lactic acid. |
