After water and starches have been mixed into the eggs, the resulting mixture is homogenised and placed in a vessel (1) where pressurised steam is injected into the mixture of water, starch and scrambled eggs, the vessel also being heated through its walls (2). Application to the preparation of scrambled eggs, at a homogeneous and controlled rate of coagulation, for incorporation in a prepared food that can then be frozen. <IMAGE> |
