Apparatus is disclosed for removing selected flesh portions such as tongue or membraneous tissue from fish. The device includes fluid jet means for drawing the flesh portion from the fish, reciprocating cutting means for severing the flesh portion from the fish, the fluid jet means effecting reciprocating movement of the cutting means and discharge of said flesh portion from the apparatus.
