PURPOSE:To obtain the title rice gruel favorable in mouth feeling by putting rice, water, seasoning solution, acidic ingredients, etc., into a vessel followed by addition of a salt of organic acid or alkali and by adjusting the inside of the vessel to a specified pH level followed by sealing the vessel and then making a hot sterilization. CONSTITUTION:1pt.wt. of rice, 5-200 pts.wt. of water or seasoning solution, and acidic ingredients and, where appropriate, other ingredients such as vegetables are put into a vessel. The pH level of the vessel contents is then adjusted to 4.3-5.4 by adding a salt of organic acid or alkali to said water or seasoning solution. Thence, the vessel is sealed and put to hot sterilization, thus obtaining the objective rice gruel. |
