Peel and core waste from apple processing is utilised by conversion to pumpable pulp in a fruit mill, at the latest after 1 to 8 hrs., and storing the pulp in coolable vessels for transport. The pulp is pressed for juice removal not more than 8 days after prodn. and is processed to a concentrate or flavouring. The residue is combined with the residues from juice mfr. from whole apples for further processing. ADVANTAGE - Simple, environmentally acceptable and economic use.
