Method of producing high purity chymopapain from raw papain; is characterised in that the raw papain is dissolved in water or a buffer, in the presence of a reducing agent; settled clear solution is subjected to gel chromatography, the outcome containing active enzyme is collected and vaporized from its frozen state.
