NEW MATERIAL:A new esterase having the following properties: Activity, acting on phospholipid of wheat, Tween 80 and 1-monooleoyl-lac-glycerol; substrate specificity, acting on phospholipid of wheat, tween 80 and 1-monooleoyl- lac-glycerol, but inactive on triolein, 1-3-diolein and nonpolar lipid of wheat; optimum pH, pH5-8; optimum temperature, 30-45 deg.C. USE:An age resistor for (cake) bread, capable of keeping the bread soft for a long time by using it in preparation of bread dough. PREPARATION:Lactobacillus curvatus TN-8 NRIC 1716 (FERM P-11682) is cultured and a bacterial cell is separated from the cultured product and the aimed esterase is extracted from the bacterial cell. |
