PURPOSE:To induce a ripening effect to a seasoning liquid and to obtain a seasoning liquid having taste, flavor, etc., comparable or superior to those of a seasoning ripened over a long period by radiating far-infrared ray having a specific wavelength to the raw material of a seasoning liquid (soy sauce) in fermentation process or thereafter. CONSTITUTION:A ripening effect can be induced and a seasoning liquid having taste, flavor, mildness and body comparable or superior to those of seasoning liquid (soy sauce) ripened spending a long period can be prepared by irradiating a seasoning liquid raw material with far-infrared radiation having a wavelength of 3-30mu in a reaction tank filled with a specific microbial strain at a high concentration during the fermentation process to complete the fermentation in a short time or during processes after the fermentation process. |
