Meat or pastry is re-heated or finish-baked in an oven in which a mixt. of hot air and steam is injected inside the food directly before and/or during the heating process. At the same time, the food is exposed on the outside to a mixt. of hot air and steam. The baking oven has a baking muffle and a vapour generator witha water tank and an instantaneous flow water heater. A metering pump controls the water flow rate and a blower supplies the air for the mixture which is injected through a hollow spit with perforations. At the same time the mixture is admitted in the muffle through the pipe, controlled by valve. The total amount of water introduced should be 0.5-5% of the weight of the food.
