The present invention offers an improved process and an electromechanical measuring instrument in the form of a pistol for fat classification of the slaughter bodies of sheep or lamb. This new electromechanical instrument is manoeuvred purely by electrical means with the aid of a pair of manoeuvring contacts. In addition, a central processor unit in the instrument uses an algorithm which describes a connection between a fat content value expressed in percent and the tissue thickness measured with the instrument, as well as the slaughter body weight if this is available. The instrument thus calculates a fat content value which is corrected for the slaughter body weight when this weight value is available in the instrument as a result of having been inputted from outside and the pistol displays this calculated value on a built-in digital display unit. The instrument also offers a simple facility for automatic registering of measurement data using an external registering device.
