PURPOSE:To obtain the subject food having a harmonious flavor by dispersing a granular food composed of a liquid- or paste-state fruit juice wrapped in a high-molecular polysaccharide metal salt gel in a fermented milk and preventing the taste of the fruit juice from transferring into the fermented milk. CONSTITUTION:A metal salt capable of forming a gel of a high-molecular polysaccharide having a gel formation property by a reaction with the metal salt is mixed in a fruit juice-containing solution and the resultant solution is added dropwise to an aqueous solution of the above-mentioned high-molecular polysaccharide capable of forming a gel by the reaction with the metal salt. A granular food composed of the core part of a liquid- or paste-state fruit juice and a wrapping film made of a high-molecular polysaccharide metal salt gel is obtained thereby. The resultant granular food is then dispersed in a fermented milk in an amount within a range of 5-40 wt.%. |
