PURPOSE:To obtain SUSHI (vinegared rice with fishes and vegetables) having special fine resistance to teeth and flavor hardly collapsing by wrapping ingredients laid on vinegared rice with a leaf of Japanese horseradish. CONSTITUTION:Ingredients such as vinegared mackerel, vinegared sweet fish or baked eel are laid on vinegared rice and grated Japanese horseradish is added between the vinegared rice and the ingredients, as desired. Next, resultant material is wrapped in a leaf of Japanese horseradish, preferably a leaf of Japanese horseradish obtained by pickling with salt, leaving in a cold and dark place for several days, desalting and crumpling. |
