The invention relates to a process for the preparation of carnosic acid from rosemary or sage, in which the spice is extracted with a non-polar solvent or with a mixture of highly apolar solvents, the extract obtained is subjected to a selective adsorption treatment on a solid support, the carnosic acid is desorbed with a polar solvent or with a mixture of highly polar solvents and the solvent is evapo- rated.
