PURPOSE:To obtain a food and drink useful as various kinds of foods and drinks such as juice, condensate or dried powder, having containing color tone or processed food such as snack foods, not darkly browning even by exposure to air, by heat-treating Polymnla sonchifolia, grinding and treating with an enzyme. CONSTITUTION:Polymnla sonchifolia is heat-treated by immersion in hot water preferably at 80-110 deg.C for 3-30 minutes, ground and treated with an enzyme (preferably cellulase or pectinase) to give the objective food. |
