PURPOSE:To obtain the title composition capable of giving oxidation resistance in heating at elevated temperatures when added to edible oil by incorporating a phospholipid, etc., with an antioxidant. CONSTITUTION:The objective composition can be obtained by incorporating (A) a phospholipid {pref. a compound of the formula [[A is H or R2; R1 and R2 are each 8-24C aliphatic acyl; X1 is H, choline, ethanolamine, serine, inositol, glycerol phospholipid base residue, alkali (alkaline earth) metal, trivalent metal or ammonium; X2 is H, alkali (alkaline earth) metal, trivalent metal or ammonium; weight ratio of phospholipid containing no N in X1 and X2 to phospholipid containing N in X1 and X2 being 1.0]} and/or diglyceride (pref. constituent fatty acid residue is of 8-24C and the content of unsaturated fatty acid residue accounting for >=70wt.% of said fatty acid residue) with (B) an antioxidant. |
