PURPOSE:To obtain the subject flavor, excellent in palatability and aging feeling and useful as foods, medicines, etc., by subjecting a vanilla.beans material to extraction treatment with a concentrated fraction of an aromatic ingredient in liquors having a prescribed alcoholic concentration. CONSTITUTION:The objective flavor is obtained by dipping a vanilla.beans material such as Bourbon vanilla.beans in a concentrated fraction of an aromatic ingredient in liquors, e.g. refined SAKE (Japanese rice wine), wine or whisky [used in an amount of preferably 5-10 pts.wt. based on 1 pt.wt. vanilla.beans] having at least >=40wt.% alcoholic concentration and allowing the fraction to stand therein at 30-60 deg.C for 6-24hr or stirring the mixture and carrying out extraction treatment. |
