PURPOSE:To obtain the title sweet potato jam having the same texture as jam produced from beans by freezing sweet potatoes in a raw state as they are, thawing, pressing, removing juice and boiling. CONSTITUTION:Sweet potatoes are frozen in a raw state as they are. Consequently, cell tissue is destroyed by formed ice crystal and a juice component is liberated to the outside of cells. After thawing, the sweet potatoes are pressed, juice is removed and the sweet potatoes are boiled to give the objective jam. |
