PURPOSE:To obtain an esterase having high activity and useful for organic synthetic reaction on an industrial scale at a low cost by adding an amino acid or amino acid and a fatty acid, etc., to a medium and culturing a microbial strain capable of producing esterase. CONSTITUTION:The objective esterase can be produced by culturing an esterase- producing microorganism (e.g. microorganism belonging to genus Arthrobacter or Bacillus) while adding an amino acid (preferably glycine, alanine, etc., in an amount to give a concentration of 0.5-2%) or said amino acid and a fatty acid (preferably stearic acid, oleic acid, etc., in an amount to give a concentration of 0.5-2%) or said amino acid and a fatty acid ester of a polyol compound (e.g. sorbitan monolaurate in an amount to give a concentration of preferably 0.2-5%) at the initial stage of culture. |
