PURPOSE:To obtain the subject block meat excellent in the quality of the meat and useful as, e.g. a material for SHABU-SHABU (dish cooked at table by dipping slice of meat into boiling broth and served with soy-based source) by packing meat of fish or shells into a retainer, rapidly freezing the packed meat under pressure, taking out the frozen meat and vacuum packing the frozen meat. CONSTITUTION:Fish meat of tuna, flounder, etc., shell meat of abalone, scallop, etc., or meat of fish or shells such as a crustaceans of lobster, crab, etc., is packed into a retainer in the presence of a binder or without using the binder. The packed material is rapidly frozen under pressure, e.g. from 0-3 deg.C to -40--45 deg.C in about 25min. The frozen meat is taken out from the retainer and then vacuum packed, thus obtaining the objective block meat. |
