PURPOSE:To obtain the subject fiber having excellent edibility, high water absorption and solubility in water by extruding a spinning dope comprising water-soluble natural polysaccharides, a polyhydric alcohol and water into a coagulation bath to form fibrous shape and removing water so as to make water content to be below a specific value. CONSTITUTION:A spinning dope composed of water-soluble natural polysaccharides [e.g. alginic acid (salt), furcellaran, carrageenan or agar-agar], a polyhydric alcohol (e.g. sorbitol, ethylene glycol or glycerin) and water is extruded from a nozzle into a coagulation bath to form fibrous shape and water is removed so as to make water content to be <=50wt.% to afford the aimed fiber. |
