A process for separating undesired foreign substances from vegetable, animal and maritime oils and fats. During refining or fractionated crystallisation, an electrostatic field is generated in the oil to be treated by means of at least one positively charged electrode. The solid particles deposited on one and/or the other electrode through crystallisation are mechanically removed at the end of the process. The clarified or depleted oil is discharged.
