Prepn. of optically active cyanohydrin derivs. (I) comprises enzymatic reaction of oxo cpds. with hydrocyanic acid in an organic solvent in the presence of (R)- or (S)-oxy-nitrilasee (4.1.2.10) or (4.1.2.11) solubilised in a lyotropic liq. crystal. Reaction takes place under acidic conditions and such that competing chemical reactions and racemisation are excluded. The surfactants used in the liq. crystal formation are not those whose hydrolysis would lead to an increase in pH.
