发明名称 FREEZE-RESISTANT JELLY
摘要 PURPOSE:To provide a jelly containing xanthan gum, iota-carrageenan, locust bean gum and a polymeric substance containing beta-glucan as main chain, exhibiting little decrease of gel strength and no syneresis by freezing and thawing and having excellent freeze-resistance. CONSTITUTION:Sugars, xanthan gum, iota-carrageenan, locust bean gum and a polymeric substance containing beta-1,3-glucan as main chain are mixed in powdery state, added with water and sterilized by heating at 85 deg.C for >=3min. The sterilized solution is cooled to 40-60 deg.C and filled in a cup to obtain the objective jelly.
