PURPOSE:To obtain raw bread crumb having good appearance and texture and excellent long-term keeping quality by allowing to stand a bread block obtained from a current-carrying type baking and heating only the surface layer part of the bread block by using saturated steam, etc. and then grinding the heated bread block. CONSTITUTION:Bread block obtained by a current-carrying type baking is allowed to stand and then only the surface layer part is heated to at least 55 deg.C, preferably 55-100 deg.C by using saturated steam and/or superheated steam (preferably heated to 120-350 deg.C), and then ground to provide the objective raw bread crumb. |
