PURPOSE:To obtain the title noodle having good taste without impairing viscoelasticity, binding property and smoothness, etc., by taking out a reproductive nest from the sea urchin, kneading the reproductive nest with wheat flour, water and salt and making the kneaded material into noodle. CONSTITUTION:A reproductive next of sea urchin is taken out from the sea urchin and salt is added to reproductive nest to produce the salted sea urchin. The salted sea urchin is dipped in water and the residue is separated and removed and the salted sea urchin is added to wheat flour and water so as to have 40wt.% content of salted sea urchin, and the resultant blend is kneaded and made into needle to provide the objective noodle. |
