<p>A method for separating α-lactalbumin from the other protein fractions of whey. The method includes extracting α-lactalbumin from acidified, heat-treated whey using an organic solvent. The α-lactalbumin is then precipitated from the solvent using a base. The method can be varied to produce purified β-lactoglobulin and serum albumin.</p> |
