A protein composition comprising an aggregate of protein particles wherein the particles having a diameter of 8 mu m or less account for at least 95 % of the whole and said aggregate becomes transparent when dissolved in an aqueous solution of sodium dodecyl sulfate of a concentration of 0.5 % (pH : 10, containing 3 mol/l of urea). This composition is prepared by heating an aqueous solution of a protein to cause the aggregation and coagulation of the protein, removing a liberated liquid, and unfastening the formed mass. |
