The device comprises, in a thermostatted enclosure (1), a support structure (2) with two plates (4, 5) on either side of a transparent unit (7) made from sapphire, for example, and two cylindrical chambers (8, 10, on the one hand and 9, on the other hand) of small cross-section which are respectively delimited by two sliding pistons (16, 17) which are moved in the two chambers by purely mechanical drive means (threaded rods 21, 22 rotated by shafts coupled with these driving means). The first chamber (8, 10) is partially visible through the transparent unit (7) and is terminated by a bevel (11) above which emerges a channel (12) communicating via a valve (18) with the second chamber. A capillary (27) bringing the two chambers into communication enables viscosity measurements to be made. Application to thermodynamic tests on an oil-yielding production site, for example. <IMAGE>
