PURPOSE:To obtain the title liquid stock having excellent shelf stability, fragrance, flavor and taste, by reducing an amount of dissolved oxygen in liquid stock before sterilization and in packaging and sealing after the sterilization, making an amount of oxygen in a container into <= a given amount based on the liquid stock contained. CONSTITUTION:For example, in extracting dried bonito, etc., with purified water such as distilled water to give liquid stock, sterilizing the liquid stock, packing the liquid stock under a sterile condition into a container and sealing, an amount of dissolved oxygen in liquid stock is reduced before sterilization and in packing and sealing and packaging (preferably aseptic packing and packaging) after the sterilization, finally the amount of oxygen in liquid stock contained is made <=3ppm, preferably <=0.5ppm to give the objective liquid stock. |
