PURPOSE:To readily prepare a low salt pickled ume (a Japanese apricot) dehydrated without a large amount of salt and not requiring a desalting process, etc., by pickling raw ume with salt, bringing the salted ume into contact with a high osmotic pressure substance through a semi-permeation member to dehydrate a specific amount of water. CONSTITUTION:Raw ume is pickled with 1-15wt.% of salt and brought into contact with a high osmosis substance higher than the osmosis of the ume through a water-permeable semi-permeating membrane to dehydrate 5-35wt.% of water for providing the objective pickled ume having a water content of 55-80wt.% and a salt content of 1-10wt.%. |
