In a process for the preparation of caseinates comprising the introduction of casein, alkalis and/or basic salts and water into an extrusion device, where the components are mixed thoroughly and subsequently experience an increase in pressure and temperature by the action of reverse transport elements, so that a finished/starting product results with the avoidance of a separate comminution step carried out subsequently to the extrusion process, it is arranged that the pressure build-up takes place by the action of the reverse transport elements or kneading blocks immediately prior to the discharge end of the extruder and the product is freely discharged through this end of the extruder. A device for carrying out the process is characterised in that the reverse transport elements 9 or reverse flow kneading blocks are arranged immediately prior to the discharge end (end face 13) of the extruder (1) and that the discharge end of the extruder (1) is substantially open without reduction in cross section compared to the free extruder cross-section (D). …<IMAGE>… |
